30 year old vines, hand cultivated. the fruit was picked at 24 brix.
the wine soaked 2 days before we started fermentation. ML occurred naturally over time and the wine finished dry. We aged the wine in mostly 2 year old french oak from 3 producers.
The wine had all the characteristics of cabernet, it need more tannin. We had some Tannat from a neighboring vineyard that would do the trick. Big and bold the wine has wonderful oak tones with hints of dark chocolate. This is a perfect every day cabernet.
